Yeah, sounds like you have GT40 heads based on your description of plug angle. The GT40p plugs to have an angle, but you are right, they are much more straight out compared to traditional Windsor heads. There are very few Ranger-friendly GT40p headers out there. The passenger side would drop right down onto the frame. Driver's side might too. You really need something that exits to the back. And even then, you'll have to notch the frame. It has some wiring, but they are more a conceptual wiring schematic. They are not nearly as detailed as the actual Ford publications called "wiring diagrams". Ford Wiring Diagrams include things like wire color, the type/shape & pin number of the connector the wire connects to, as well...

Just out of curiosity, was it stock? From what I recall, 86 Mustang 5.0Ls weren't THAT powerful. Or did estimates of HP change from the 80s such that 200hp then isn't the same as 200hp in the 90s and today? Or maybe they just had a really good torque curve...
